Keeping a small bag of potatoes in the bottom drawer of your fridge is great for when you need a fast side dish. Here are three of my favorite easy things to do with taters.
Red Potatoes
•Cut them into chunks
•Spread potatoes across cookie sheet
•Spray or brush with olive oil
•Sprinkle with salt (Jane's Mixed Up Crazy Salt is good) and rosemary (optional).
•Bake at 350 for 30 to 40 minutes.
Baby White Potatoes
•Boil them whole for 20–25 minutes
•Drain and dump them into a bowl
•Toss with butter, salt and pepper
•Squeeze part of a lemon over the top
Yukon Gold Potatoes
•Cut one or two medium sized potatoes into wedges
•Spray or brush with olive oil
•Sprinkle with salt (again, I like Jane's Mixed Up Crazy Salt) and Old Bay Seasoning (very versatile to have on hand)
•Fry in olive oil or bake at 350 until crispy
