This is a standard from our list of go-to meals we reference when we have not a creative cooking idea in our pea brains.
It's savory. It's warm. It's cheesy.
Here's what you need and how you do it:
One tube of polenta, any flavor (Often sold in the deli, natural foods section or pasta aisle of your local grocery store)
1 cup or so of ham, cubed
Mushrooms (We like a mixture of crimini and shiitake)
Sea salt, table salt or Jane's Crazy Mixed Up Salt
Slice polenta and spread it evenly across the bottom of a 9x9 baking dish. Brush with olive oil. Sprinkle with basil and salt.
Throw some ham and mushrooms across the top of the polenta. Top with parmesan and bake at 350 degrees until warmed through and the cheese is melted (10 to 15 minutes).
Note: If you want to get all fancy, you can broil the polenta first by placing in a single layer across a cookie sheet, brushing it with the olive oil and sprinkling with salt. When one side of the polenta has turned golden, flip it and broil the other side.
Then place in the 9x9 baking dish and proceed as above.
