Our favorite way to prepare sweet potatoes (one of the world's healthiest foods, by the way), is with lime and butter.
It's so incredibly easy, tasty and a trifle unexpected.
Here's what you need and how you do it:
Butter or margarine
Stab the sweet potatoes a few times with a fork (That's right, stab them good.). Place sweet potatoes directly on the oven rack and bake at 350 for 45 minutes to an hour. While they're baking, zest off some lime (We just use a grater).
When the sweet potatoes are tender, scoop out the insides and discard the skins. Mix butter/margarine into the sweet potato meat and sprinkle with lime zest.
