Our mother-in-law received a Good Housekeeping cookbook as a wedding gift a half century ago. We say that she received it, and not she and her husband received it, because we all know how labor was divided in the 50s.
The Retro Flank Steak (otherwise known as Flank Steak, Creole Style) was printed in this cookbook and became a family favorite.
It's basically ketchup and onions over a slab of meat. But it's tasty ketchup and onions over a slab of meat.
Rating: Truly 1/2 assed
Here's what you need and how you do it
1 flank steak, about 2 lbs.
2 Tablespoons oil
3 cups sliced, peeled onions
3/4 cup ketchup
2 cups water
1 teaspoon salt
1/8 teaspoon pepper
Lightly score surface of steak with a sharp knife. Brown on both sides in oil heated in heavy skillet or Dutch oven. Add remaining ingredients. Cover. Bake at 350 degrees for 2 hours. Uncover and continue baking until meat is tender and sauce thick, about 1 hour.
Dig in and savor the 1950s goodness.

OMG! I have that same cookbook from my mother-in-law. I've never tried this recipe. JR & the homeboy will love it. Good weekend fare. I may have to pour a bit of red wine over the top though. I can't seem to cook/live without it.
Thanks for sharing.

We have been talking about how delicious this dish is, for years and years and years. The cookbook is long gone and we did not know how to recreate the dish. Thanks so much. My mother, who used to make this, will be so happy. Now, I would like to find a copy of the cookbook. I remember it to have a red cover, the pages were probably 5x8 and the book was very very thick. Is that what you remember?

Lauren,
Our copy has a black cover. But yes, it's very thick and the book is about 5x8, maybe slightly larger. Good luck finding a copy of the cookbook. It's a gem.
