We are big fans of beets around here. We like them prepared just about any way. But tonight we outdid ourselves. And the best part? It was easy.

This looks lovely... but it still can't make me overcome my repulsion of beets. (I pretend they aren't really in my V8 Juice.)

I've been curious about beets ever since that Tom Robbins book--is it Jitterbug Perfume where he talks about beets so much? Can't do gorgonzola, though. I did work at a Russian place in college that made a great borscht. Hm...
