We've all had these. We all love these. They're also known as 7-layer bars. Though ours are only 5 layers. Because we're too lazy to throw on the sixth and seventh and because we can't do the butterscotch chips and walnuts. But you know what? We don't miss them at all.
If you want a rich, fantastic, crowd-pleasin' dessert that takes less than 10 minutes to make, look no further.
Here's what you need and how you do it
1/2 cup butter or margarine, melted
1-1/2 cups graham cracker crumbs
1 cup chocolate chips
1-1/2 cups coconut
1 can Eagle Sweetened Condensed Milk or, for a dairy-free version, use 8 ounces of brown rice syrup
Preheat oven to 350 degrees.
Pour butter into 8x8 or 9x9 baking pan. Sprinkle graham cracker crumbs over the top. Scatter chocolate chips over those and then layer on coconut. Drizzle sweetened condensed milk (or brown rice syrup) over the whole shebang.
Bake for 25 minutes. Let cool before cutting and serving.








Mmm, I wonder if I can skip the coconut and use something else. This recipe made me laugh a little because in the south, "Eagle Brand" means sweetened condensed milk the way that "Coke" means any soft drink.

I make the regular 7-layers, with the butterscotch chips and pecans (not walnuts)... but I've started also making a variation where I use chocolate graham crackers instead of plain + peanut butter chips instead of butterscotch + peanuts instead of pecans/walnuts. Delicious!

We just tried these today. Awesome! I couldn't find brown rice syrup so we used the condensed milk. These remind me of my favorite Girl Scout cookies, but without all of that unnecessary cookie getting in the way of the good stuff.

I have made these for 30 years and have never used brown rice syrup. I don't use the coconut or nuts either. My recipe is slightly different - its 1 cup of everything and that makes it easier to remember.
