After the overindulgence of hams and cakes and cookies etcetera this holiday season, we were longing for something simple. A four-ingredient miso soup that packs a nutritious punch and has a lot of flavor, too, is just what we were in the mood for.
This is our favorite ten-minute lunch (or first dinner course). It's easy and protein-rich.

Here's what you need and how you do it
3 cups water
2 Tablespoons miso paste, or to taste (We use yellow miso. You can find it in the refrigerated section of many grocery stores, usually near the tofu.)
3/4 cup firm tofu, cubed
3 green onions, sliced (white and green parts)
In a saucepan, bring water to a boil. Add miso paste and let boil for one minute. Turn down heat to medium. Add tofu cubes and green onion and let simmer for two to three more minutes.

All the recipes I've seen for miso soup lately are all fancy-like. I'll make this one. Often.

I've never tried Miso Soup... will I like it? I'm more than ready for something light and tasty, and this sounds pretty darn good!

I LOVE Miso soup and make sure to order it every time we go to our local Japanese restaurant. Now that I have this recipe I will save countless dollars and be able to buy myself a car. Or maybe something less spectacular like a dish towel.

I love miso. We are trying this THIS week. If I can find a delicious (or even half-assed) dumpling recipe, I'm in the money. Or, in the dinner.

mmm! I love miso soup too! It totally satisfies my salty craving during these cold winter days. I always buy the single-serving, prepackaged kind, but this looks way better! Thanks!

I always ask for a bowl of miso soup whenever I get sushi at restaurants. I had no idea it was so easy to make at home-can't wait to try it!
