A few days ago, we serendipitously happened upon this post for breakfast pizza at Smitten Kitchen (never mind that we read the blog religiously and there was nothing really serendipitous about it, except the timing). We were moments away from throwing a kids' birthday party, a morning birthday party, and we needed something to fill up the Littles besides just waffle cake.
Breakfast pizza! Perfect. Except that none of the children we know would've gone for the green onions, chives, shallots, or other delicious veggies.
So we decided to make the breakfast pizza child-friendly. Which basically meant simplifying it down to four ingredients. It turned out so well, that the adults at the party were gasping and exclaiming and grabbing slices faster than the kids could.
Rating: 1/4 assed (especially if you buy pre-made crust)
Here's what you need and how you do it
One pre-made pizza crust
1-2 cups mozzarella cheese
3 eggs, scrambled
5-6 slices bacon, fried and diced
Preheat oven to 350 degrees F. Spread pizza crust evenly over shallow pan. Top with remaining ingredients. Bake for 10 to 15 minutes, or until crust starts turning golden and cheese is melted.

THis breakfast pizza sounds delicious. Seems like a breakfast egg with bacon but just on a pizza. Great.

I can't wait to get home in another 2 weeks, because I'm dying to cook for the family. Here in Oz, the stove is too small, the oven is a darned "Easy Bake Oven" size... and I MISS cooking on a regular basis.
The grandsons will LOVE this!

I used to work at a grocery store in their pizza section and we had two varieties of breakfast pizza. One very similar to this one, but with sausage, and sausage gravy on it as sauce. The other had bacon, onions, eggs, and hashbrowns on a sour cream and cream cheese base.
Man, they were good! I keep thinking I should make some at home.
