Another option for this is to add one egg and a tub of cool whip to the cake mix and then roll in powdered sugar. Makes the cookies really chewy.

I use oil, but I have made cookies from cake mixes for many years. Try German Chocolate, my kids love them.


I have a friend who used to make these with chocolate cake mix. Never thought about lemon, hmmm... red velvet would be good too!


I've tried the same thing, only use 1 box of cake mix, 1 egg, and 2 and 1/4 c whipped topping--that's it! It's thick, but then you spoon out a little, roll it in powdered sugar, and bake at 350 for about 10 minutes. Sooooo good, chewy and soft. I'll have to try yours, too!

I used to make cookies like this using chocolate cake mix and a can of pumpkin, though yours look much better- rolling in sugar and some fat will do that!


Delicious and rediculously easy! The cookies are so light and fluffy! Sometimes (particularly in the summer)I refrigerate the cookies after they are done - a cool lemon cookie is a GREAT treat on a hot summer's day!

I have also used this recipe with other cake mix flavors. For Thanksgiving, I used a spice cake mix and topped the cookies with cream cheese icing. They were a BIG hit!
