I love Italian giardineira's mix of twangy, puckery goodness coupled with that kick of the hot pepper. Thank you for this recipe. I think I might add the cauliflower and skip the carrots. I am one of those weird people that loves the first and has no use for the latter. I, too, love the job the rice cooker does on grains. Can't get more half-assed than that. Yum!

Omigosh... I'm definitely going to try this! My mom used to make wonderful giardiniera, and I haven't had any in almost 25 years - It's about time I made up for lost time, don't you think? :)

I forgot to say that if you want to make a big batch and can it, just use a simple water bath process. I bought an $11 starter kit at the grocery store that included 3 jars, a little rack/lifter thingy, and instructions. Worked great.

That salad looks just lovely! Italian is not my favorite for entrees, but this one looks really tempting... :)
